Cook the sauce until it is genuinely thick before the eggs go in. Watery shakshuka is just eggs in soup.

- 3 tbsp olive oil
- 1 onion , sliced
- 2 red peppers , sliced
- 4 garlic cloves , sliced
- 2 tsp cumin seeds
- 1 tsp smoked paprika
- 800 g tinned tomatoes
- 6 eggs
- 1 tsp sumac , to finish

Method
- Soften the onion and peppers in the oil, slowly, until sweet -- fifteen minutes, not five.
- Add garlic and spices, one minute, then the tomatoes. Simmer hard until thick enough to hold a channel.
- Make wells, crack in the eggs, cover and cook until the whites set and the yolks do not.
- Sumac over the top. Bread, obviously.
